Comparative fermentations with parent yeast BY4743 and four Δvma mutants and Δopi1 in CDGJM_200. Fermentations (100 mL) were performed in triplicate in CDGJM_200 at 28°C whereby the deletants were compared directly with the parental strain BY4743. Fermentation progress was monitored by determining the total residual sugar (glucose and fructose) by enzymatic analysis. Growth was monitored as optical density (600 nm) 20 h post-inoculation and at intervals throughout fermentation.
